Pasta - We're going for rigatoni, but any type of pasta will do.
Mushrooms - Here, button mushrooms because they're easy to find and we want to make your life easy.
Spinach - We make this recipe with two handfuls of spinach. You can add more to suit your taste, of course.
Spices - Salt, paprika, and finely ground black pepper.

1. Cook the Pasta:

  • Boil your chosen pasta in salted water until it reaches an "al dente" texture.
  • Before draining the pasta, reserve about ⅓ cup of the pasta cooking water.
  • Drain the pasta and set it aside.

2. Sauté Onions and Mushrooms:

  • Heat olive oil in a large skillet over medium heat.
  • Add the chopped onion and sliced mushrooms.
  • Sauté until the onions become translucent, and the mushrooms turn lightly browned and tender.

3. Add Spinach:

  • Stir in the chopped spinach and continue cooking for about 5-8 minutes, allowing it to wilt and soften.

4. Season:

  • Season the mixture with salt, paprika, and black pepper. Adjust the seasonings according to your taste.
  • Create the Creamy Sauce:
  • Pour in the whipping cream and milk, and stir well to combine.
  • Let the mixture simmer for a few minutes until the sauce thickens slightly.

5. Incorporate Cheese:

  • 3-4 tablespoon - 45 ml olive oil
  • 2 cups - 450g grated Mozzarella cheese
  • ¾ cup - 180 ml whipping cream
  • ¾ cup - 180 ml milk
  • cup - 80 ml pasta cooking water

Notes

(1) Mmmh more spinach: If you decide to use more than a handful of spinach, pay attention to the texture of the sauce, as spinach releases water during cooking. The solution is to let it simmer a little longer or use less milk than planned.

(2) Spinach cooking: Make sure you don't overcook the spinach: To preserve its taste, it's best not to overcook it. Add it to the pan towards the end of cooking the mushrooms and onions, and simmer for just 5 to 8 minutes until it wilts slightly.

Al dente pasta: Be sure to pull the pasta from the boiling water when it is still slightly undercooked because it’ll finish cooking in the mushroom sauce.

Add a hint of garlic for extra flavor: If you like garlic, you can add a finely chopped clove of garlic when you sauté the onions. The garlic will bring an extra aromatic flavor to the recipe and will go perfectly with the mushrooms and spinach.
